Highfield Awarding Body for Compliance (HABC) or Chartered Institute of Environmental Health (CIEH) or Royal Society for Public Health (RSPH).

Training may also be delivered unaccredited, with issue of hsh certificate of attendance.

Guided Learning Hours 18-21 hours

There are no pre-requisites for this qualification. It is strongly advised that candidates already hold the Level 2 Award in Food safety or equivalent and also have a minimum of level 2 in literacy or numeracy or equivalent. A three day course designed to address the role and responsibility of the supervisor in relation to safe food handling practices. The course is usually run one day per week, for four consecutive weeks (last session half day only for review and examination). Supervisors and potential managers must be aware that, in addition to traditional hygienic practices, they should seek to identify and prevent food safety hazards at all stages in food production, preparation, and service to ensure a safe food product.

The course covers:

  • Introduction to Food Safety
  • Micro-organisms (Multiplication & Survival Hazards)
  • Contamination Hazards and Controls
  • Food Poisoning and its Control
  • Food Handlers and Personal Hygiene
  • Food Safety Management Systems and HACCP
  • HACCP from Purchase to Service
  • The Design and Construction of Food Premises and Equipment
  • Food Pests and Control
  • Cleaning and Disinfection
  • Supervisory Management
  • Food Safety Enforcement.

Assessment is a 2 hour, 60 question multi-choice examination. ( pass mark 40). Candidates will have achieved a merit if they achieve 50/60.

The course will include practical demonstration and individual participation.
