Training may also be delivered unaccredited, with issue of hsh certificate of attendance.

Guided Learning Hours 18-21 hours (3 day course)

There are no pre-requisites for this qualification. It is advised that candidates already hold the Level 2 Award in Food safety or equivalent and also have a minimum of level 2 in literacy or numeracy or equivalent.
This three day course is designed to address the role and responsibility of the supervisor in relation to safe food handling practices. The course is usually run one day per week for three consecutive weeks. If candidates wish more time for home study, they may defer sitting the exam paper to an additional pre arranged date. 

The course covers:

  • Introduction to Food Safety

  • Micro-organisms (Multiplication & Survival Hazards)

  • Contamination Hazards and Controls

  • Food Poisoning and its Control

  • Food Handlers and Personal Hygiene

  • Food Safety Management Systems and HACCP

  • HACCP from Purchase to Service

  • The Design and Construction of Food Premises and Equipment

  • Food Pests and Control

  • Cleaning and Disinfection

  • Supervisory Management

  • Food Safety Enforcement.

Assessment is a 2 hour, 60 question multi-choice examination. ( pass mark 40). Candidates will have achieved a merit if they achieve 50/60.

The course will include practical demonstration and individual participation.
