Guided Learning Hours 36 - 40 hours

It is strongly advised that candidates already hold the Level 3 Award in Supervising Food Safety and also have a minimum of level 2 in literacy or numeracy or equivalent. A five day (plus examination day) course essential for all those who implement, manage and audit food safety management systems, including business owners, managers, production managers and supervisors. The qualification will ensure that managers and potential managers have the opportunity to develop a level of knowledge and skills that is commensurate with their responsibilities. The syllabus ensures candidates have a thorough knowledge of hazards and controls and the importance of developing, implementing and monitoring food safety procedures.

The course is usually run in two day blocks over a period of four weeks, allowing time for private study and consolidation.

The course covers:

  • Introduction to Food Safety and Contamination
  • Microbiology (Multiplication & Survival Hazards)
  • Food Borne Illness
  • Food Handlers and Personal Hygiene
  • Training and Education
  • Food Hazards and Controls from Purchase to Service
  • The Design and Construction of Food Premises and Equipment
  • Cleaning and Disinfection
  • Pest Management
  • Food Safety Management and HACCP
  • The Role of the Manager
  • Food Safety Legislation and Enforcement

Assessment is by a single 2½ hour examination session consisting of two examination papers. Paper one will comprise of a 30 question multi-choice examination and paper two will consist of a choice of 5 from 6 written questions. 60% will achieve a pass grade, those achieving 75–89% will be awarded a merit grade and those achieving 90% or more will be awarded a distinction grade. Candidates who do not achieve at least 60% will be deemed to have failed.
